Georg Greggenhofer gehört zur Gruppe der Baumeister, die den "Backsteinbarock" in Schleswig-Holstein entwickelt und zur Blüte geführt haben. Als Hofbaumeister der Fürstbischöfe von Lübeck und Herzöge von Holstein-Gottorf errichtete Greggenhofer an deren Residenz in Eutin das St. Georgs-Hospital, eine Orangerie, ein Komödienhaus, ein Kavaliershaus und ein Kollegiengebäude sowie das Lusthaus am Ukleisee. Nach dem russisch-dänischen Tauschvertrag von 1773 erweiterte er schließlich das neu hinzugekommene Residenzschloss in Oldenburg. Die Anzahl der Bauten für andere Auftraggeber nehmen ungleich größeren Raum in seinem Werk ein. So errichtete Greggenhofer unter anderem Gutshöfe mit Herrenhäusern, Torhäusern, Scheunen, Stallgebäuden und Kavaliershäusern. Außerdem plante er eine französische Gartenanlage für Schloss Ahrensburg und er ist der Schöpfer des für seine Zeit noch ungewöhnlichen Eremitagengartens auf dem Gut Schierensee. Seine Bauten zeichnen sich durch eine spätbarocke, aber dezente Gestaltung der Fassaden aus, die bereits den Übergang zum Klassizismus erkennen lassen.
