2021 Angel’s Share presents with powerful and rich, deep dark red colour showcasing a bright core. The Aromas present notes of blue fruits accented by plum, blueberry and mulberry tones. Complexing notes of briar, bay leaf, coriander seeds, dried rose petals and ash.
In McLaren Vale heavy rainfall in September and October lead to the wettest Spring since 2016. The rain slowed and stopped before the vineyards started their flowering. December and January had very mild tempretures for an Australian Summer, with only a very short heatwave in January. Veraison was later than average which contributed to a long ripening period for the fruit.
The fruit was crushed into and fermented in 5, 7 and 10 tonne open fermenters. During the peak of fermentation the batches received regular pump overs 2-3 times daily. The average time on skins was 15 days. Maturation occured in 12% new French oak hogsheads for 14 months, the balance in 1 to 8 year old. After maturation the final blend was lightly fined and unfiltered prior to bottling.
