Vinification method: Bökö is a family winery on the North side of Lake Balaton, Hungary. Winemaker David’s father has been cultivating vines since 1980’s and he havs been making wines since 2013. They do organic farming, practicing biodynamic, in their vineyards and make their wines with little to no intervention. 10 hectares, Welschriesling, Muscat Lunel, Blaufränkisch and Zweigelt, mainly old vines. They love their region, their vineyards and their profession. They do it with passion.
Harvested early from south facing, limestone vineyards of Balatonfüred. Fermented on the skins for 7 days, pressed, and kept on fine lees for 5 months. Spontaneous fermentation with no added SO2 during fermentation. Aged in stainless steel. Performed bâtonnage only 3 times. Bottled unfiltered, unfined, minimal added SO2 at bottling.
Tasting notes: medium-bodied, white tea, peaches, mango, orange blossom
Pairings: weisswurst with sweet mustard
