Made almost exclusively of Cabernet Franc, produced with a short maceration but a long maturation on lees, this red wine is a greqt expression of the unique terroir of Fosse Sèche. A high quality wine with a distinct and sophisticated personality, it will be a perfect match to a rack of lamb, duck breast or fried mushrooms. Best served between 12 and 14°.
This 2020 vintage is one of the best to date and brings Eolithe to new height in terms of balance and maturity. Can be drunk now as well as in the coming 20 years.

Technical information :
Grape variety: 99% Cabernet Franc, 1% Cabernet Sauvignon
Vines: Between 10 and over 60 years old
Soil: Jurassic plateau with stony structure (flint) with gravels bound together with slightly clayey earth. Free of any gross limestone, this soil allows a very deep rooting.
Climate: Temperate zone with oceanic influence, fostering a slow and progressive maturation.
Cultural method: Organic (certified by Ecocert) and biodynamic (certified by Biodyvin)
Yield: Less than 20hl/ha
Vinification: Maceration 3 to 15 days, maturation 14 months on lees.
Keeping potential: 20 years
