While your PK360 is designed to eliminate flare-ups when cooking with the capsule lid closed, GrillGrates(tm) add an extra layer of security by blocking flare-ups while the lid is open. This function is great for cooking steaks at very high temps, offering a steak house quality sear. GrillGrates(tm) are made of hard anodized aluminum, which conducts heat more efficiently than cast iron or stainless steel.
