These are North Star Farms best White American Bresse chicks — top of the North Star Line! They come from 15 years of careful breeding and are some of the rarest and most beautiful chicks North Star Farms offers. With bright white feathers, deep blue legs, and sometimes even dark eyes, these chicks grow into stunning birds that truly stand out in any flock.

These chicks are sold as straight run, which means they are not sorted by gender — you’ll get a mix of males and females, but North Star Farms doesn't choose which ones. The chicks have very white chick fuzz and are chosen for their strong looks and healthy growth. If you’re looking to build a show-quality flock or start with the very best breeding stock, these are the birds for you. Quantities are limited!

What you’re getting

  • Names: American Bresse, White American Bresse, and Gauloise are the same U.S. type—descended from France’s Bresse Gauloise (the protected French name can’t be used here).

  • Source: These birds come from North Star Farms, which has kept a closed, meat-focused line for 8+ years, originally descended from the first Greenfire Farms import (later imports were mixed by others).

  • Selection goals: hens that lay 5–6 eggs/week and table birds that finish around a 5 lb carcass at 22–23 weeks after a 2-week milk-soaked feed finish. Typical growth target: cockerels ~5 lb live at 16 weeks.

  • Type & look: bred toward the commercial/meat type—stockier, wide-bodied, heavier legs/thighs—while preserving classic Bresse eating quality (not a Cornish-cross replacement).

  • Flavor & texture: different from Cornish/CX/Rangers—tender, lightly marbled when finished, lighter bones, firm but fine texture. Excellent eating at 8–12 weeks; by ~22 weeks cocks are full, with buttery fat and crisp skin—great roasted, grilled, air-fried, canned, or in soups.

  • Eggs: mostly cream to light peach, often large to jumbo, sometimes speckled.

  • Color groupings: same genetics sorted at hatch by down color—Abigail (very white fuzz, dark blue adult legs), Gem (warmer/yellow cast, lighter legs), Daniel (legacy red-dusting/leg throwbacks; typically sold for meat or non-color homes).

  • Label: Offered under North Star Gauloise®, their trademark, to distinguish these birds from the broad “white American Bresse” label used elsewhere.

Perfect for the Price!
Color: Greige, Size: 13"D x 23.7"W x 32.7"H
The bar cart was very easy to put together. I can be "mechanically challenged" and was able to do it myself LOL It's nice and sturdy, the wheels roll smooth when you move it. The size is perfect for the small wall I have it against. I have several bottles of liquor and bartending mixer set on top, and about 20 various glassware on the 2nd shelf. The bottom shelf is taller, and does let you stand larger bottles down there. The one racks will only for the smaller size, but does hold them well.

Decent bar cart, but very annoying assembly
Color: Marble White, Size: 13"D x 23.7"W x 32.7"H
I think it looks nice and is decent value, but this thing is a pain to put together. Instead of just sending 3 shelves, you get 6 pieces to connect together to make 3 shelves. On top of that - they don’t even really connect. It would be 1000x easier if they added a couple of wooden pegs to connect the 2 pieces together. Instead, you have to do a balancing act which is tedious as can be. I ended up super glueing 2 of the 3 shelves togethers after how annoying the first was, so I would highly recommend you do the same. The whole process of putting it together feels like a balancing act. For something so small, it’s about as annoying as possible to put together. Nearly every step requires you to balance something and screw it in. Most of this would be alleviated if, as I said, it was just 3 pieces for the shelves instead of 6. But, you get what you pay for. Overall, I can’t complain too much for the price and result, but I wasn’t a fan of building it. It’d also look a little nicer if each shelf didn’t have a crack going through it.
