Julien Guillot Marc de Bourgogne 1998 is a rare and deeply characterful Burgundian spirit made from distilled grape pomace rather than finished wine, offering a very different profile from Cognac or Armagnac. Julien Guillot, best known for the legendary wines of Clos des Vignes du Maynes in the Mâconnais, approaches distillation with the same old-school, terroir-minded philosophy that defines his wines.
Distilled from the skins, seeds, and stems left after fermentation and then aged for decades, the 1998 Marc develops remarkable depth while retaining a distinctly earthy, Burgundian personality. The nose is intense and aromatic with dried cherry, orange peel, walnut, forest floor, black tea, tobacco, spice, and subtle floral notes layered over a savory core.
On the palate, it’s structured and complex with flavors of roasted nuts, dried red fruit, cocoa, cedar, baking spice, and a slightly rustic, vinous edge that sets Marc apart from more polished grape brandies. There’s a firm mineral backbone and a gently oxidative character that feels very connected to the world of mature Burgundy.
The long aging softens the spirit beautifully, but this still carries a raw authenticity and texture that makes it especially compelling for drinkers who appreciate traditional, minimally manipulated spirits. It’s less about sweetness or overt oak and more about earth, spice, and evolved grape character.
