Una trama tannica piuttosto definita lo accompagna ad un finale rotondo e persistente, di ottima persistenza.Non cè dubbio che le caratteristiche tipiche della zona di Cornaiano siano centrali nellinterpretare un Pinot Nero dalla spiccata eleganza. La grande acidità ed una chiara traccia minerale sono infatti note che si trovano non solo nel Blauburgunder ma un po in tutta la produzione targata Weber. Unattenta selezione dei grappoli raccolti a piena maturazione ed un lento affinamento in grandi botti di rovere porta ad un vino rosso di grande classicità: il Südtiroler Blauburgunder DOC di Josef Weger è assolutamente da non mancare.
A tutto pasto, il Pinot Nero di Weber ben si abbina a carni alla griglia, ad arrosti anche di selvaggina e a formaggi piccanti.
