In Harmelen, gelegen tussen Utrecht en Woerden, bevindt zich Kaasboerderij De Wit. Jan en Anneke de Wit runnen hier al meer dan 25 jaar hun melkveehouderij en kaasmakerij. Op deze boerderij produceren ze diverse boerenkazen, waaronder de zeldzame meikaas. Deze kaas wordt met zorg en vakmanschap bereid, wat resulteert in een product van hoge kwaliteit. ​

De meikaas van Boer De Wit wordt gemaakt van gepasteuriseerde melk en is al na één dag consumptieklaar. De kaas is licht gezouten en heeft een frisse, romige smaak die doet denken aan Italiaanse mozzarella. Dankzij het gebruik van microbieel stremsel is deze kaas geschikt voor vegetariërs. Bovendien kan de meikaas volledig volgens de Joodse spijswetten worden geproduceerd, waardoor het een populair product is binnen de Joodse gemeenschap in Amsterdam. 

Om de verse meikaas optimaal te bewaren, wordt deze na een dag vacuüm verpakt, wat de houdbaarheid verlengt tot drie weken bij een bewaartemperatuur van 5 graden Celsius. Na het openen van de verpakking wordt aangeraden de kaas binnen drie dagen te consumeren voor de beste smaakbeleving.

Hoe bewaar je de verse meikaas?

De kaas wordt na een dag vacuüm getrokken waardoor de kaas 3 weken houdbaar is. De beste temperatuur om het te bewaren is 5 graden. Na het openen van de verpakking is het verstandig de kaas binnen drie dagen te consumeren.
