Cooking it at home
Thighs go on first, skin-side down, lid closed. Wings need a hot grill and patience — turn them once they release naturally. Skewers want a couple of minutes a side, no more. My nan’s roti warms through in 30 seconds.

Sourcing
Carefully sourced chicken — from our farm, community of farmers and trusted suppliers. The jerk marinade is my mum Pearl’s recipe, hand-blended in our farm kitchen — Scotch bonnet, allspice, thyme, the works. Nothing shortcut.

Contains gluten (jerk thighs, wing roulette, roti), eggs (slaw), milk (chicken & chorizo skewers, roti, garlic yoghurt, halloumi, sweet chilli dip), soybeans (jerk thighs), celery, mustard, sesame, sulphites (wing roulette glaze).
