Toni Carbó made a name for himself through his collaboration with friend Ramón Jané as Mas Candi, opting to make their own wines after decades of their families selling grapes exclusively to large Cava houses. However in 2012 Toni and his wife Anna decided to go further and create their own project, La Salada, an homage to Toni’s great grandfather and the grapes for all of the La Salada wines come from plots that Toni’s great grandfather bought from the wealthy landowner in order to improve his family’s lot in what was then a more or less feudal system. These were the poorest plots and the vines have been grown organically and never treated with chemicals. Many of these vines were planted 80 or more years ago.

Disbarats is a blend of Macabeu and Xarel-lo. Half of the Macabeu was harvested very early in August and macerated on skins for a week. The rest of the Macabeu was harvested a week later with the Xarel-lo and pressed directly. Fermentation was done in stainless steel before being passed to concrete vat, where it was left for 8 months before bottling. A very small amount of sulphur was added to the vat after fermentation.

Quite low in alcohol and much fresher than a lot of wines from this region, this orange wine is light and salty, great on its own or with seafood.
